Best chickpea ‘tuna’ salad ever! So glad I went with four servings and can eat it for days. The dressing didn’t seem all that good when I tasted it on its own but truly shone in the salad. Can’t wait till tomorrow to eat it again!

Triple Green Vegan Miso Soup

The Triple Green Miso Soup features cilantro and red chili flakes, which amp up the flavor. Made from a handful of simple ingredients like zucchini, spinach, and frozen edamame with a Napa Cabbage Salad on the side, this dish is light but satisfying.

Loved this salad. The mushrooms and the dressing were terrific. I added diced red onion. I enjoy warm rice in my salads, and might do that next time; there will definitely be a next time!
