“I spent 5 hours today batching for a long weekend camping trip! The menu includes campfire pizzas with fruit salad, taco and nacho night, burger night with potato salad, and vegan ribs with antipasto salad and watermelon wedges. We’ll have tofu scramble one morning along with banana walnut muffins and bagels with cashew cheese spread.
We haven’t had s’mores in years, but I found vegan marshmallows and graham crackers at Fresh Thyme, plus some dark chocolate, so the kids are psyched about that!”
“Since people are always asking for suggestions for camping, I wanted to share our camping food.
Because everyone likes different things, we are doing a Tex Mex night, pizza night, burgers with packet potatoes and a farro salad, and probably some type of pasta dish on the last night using up leftover veggies and cheesy sauces.
The key is to batch as much as you can so you don’t spend your whole vacation cooking. This is what I batched in about 5 hours today – all plant based , of course! There’s queso blanco cheese sauce, beer cheese, smoky gouda, cinnamon cashew cream to drizzle over grilled peaches, veg taco meat, veg Italian sausage, veg burgers, mozzarella cheese sauce, dill vegetable dip, chipotle ranch salad dressing, apple cider vinaigrette, sweet pickles, and a cashew cheese spread.”
“We also like to do nachos over the fire for evening snacks plus hummus, various dips and spreads. I’m taking items to make cashew cheese jalapeno poppers over the fire.

“After a really fun day in the great outdoors, last night’s dinner was tacos and pie iron burritos over the fire. Here’s my Logan with his burrito, plus a pic of my loaded taco packed with refried beans, black beans, tomatoes, lettuce, tofu taco meat, guacamole, cheesy queso sauce, and grilled peppers and onions.”
