Hanky Pankies and Greek Side Salad with Red Wine Herb Vinaigrette are our take on an old-fashioned appetizer. Made with tofu crumbles and cheesy sauce on English muffins and served with almond feta-topped salad to round out the meal. Yum!

Pro tip: Buy a soba noodle brand that uses a mix of buckwheat and whole wheat flour as they can be less expensive than the 100% buckwheat varieties. To use up even more of the heaps of garden zucchini in your fridge, replace some or all of the soba noodles with zoodles (thin cooked or raw noodles made from zucchini) by using a spiralizer, a vegetable peeler (regular or julienne), or a mandoline.
