Cinco de Mayo plant based meal plan is a week-long celebration of the many sensational flavors of Mexican cuisine. You’ll feast on tasty meals like Frijole Tostadas with Pan-roasted Corn Salsa and Fresh Pineapple and Jalapeño Poppers with Chipotle Ranch Chopped Salad. This plan also features one of our most all-time popular plant based recipes: Queso Blanco. If you or your family don’t do spicy, reduce, or leave out anything too hot to handle, everything will still be delicious.

A look into the history of Cinco de Mayo

Cinco de Mayo is the celebration of the Mexican army’s defeat of France on May 5th, 1862, at the Battle of Puebla. The holiday is also known as the Battle of Puebla Day.

The Franco-Mexican War was fought over Mexican debts to France and Napoleon III’s ambition to increase France’s influence in North America. The Battle of Puebla was a surprising and important symbolic victory for Mexico.

The Mexican holiday has since been adopted by Americans, along with the misconception that it celebrates Mexican independence. It may surprise most Americans to learn that Cinco de Mayo isn’t widely celebrated in Mexico, it’s typically only celebrated in Puebla. So, why is it so popular in America?

Cinco de Mayo was embraced by Mexican immigrants to the U.S. in the mid-twentieth century as a way of connecting to their heritage and celebrating their culture. The celebrations began in Mexican American communities and grew from there.

We hope that our whole food plant based interpretation of the varied and delicious Mexican foods will nurture an appreciation of Mexican culture and all of its richness and beauty.
