Everything You Need to Feel Outrageously Good + Pan-Roasted Corn Salsa (Oil Free)

If you know me online, you know that my first question to any new member in the Clean Food Dirty Girl private Facebook group is:

“Do you know about our scrumptious Plant Fueled Meal Plans?”

If you know me personally, you know that my first question to anyone who asks about my veggie-munching ways is:

“OMG! Have you heard of Clean Food Dirty Girl (CFDG) and their amazing weekly Meal Plans!”

If you don’t know me, and you meet me on the street, you will at some point be lovingly asked:

“Did you know that my life has been completely revolutionized by CFDG, and did you also know that they offer Whole Food Plant Based Meal Plans that are orgasmic!?”

Even if you never see me, but you sit down at a vegan restaurant after I’ve left?

“You’ll find my CFDG business card lying on the table with my name and MEAL PLAN AMBASSADOR embossed on its surface. For the record, I do not get paid extra if someone signs up for the meal plans on my recommendation, I just get happy!”

Luckily, I am a really nice person, and most days I’m not threatening or stalker-ish, or loony.

But, God forbid, someone asks me about my plant tattoo, or my weight loss, or my glowing skin, or my outrageous energy.

And, heaven help us all, if they mention any problem (medical or otherwise) that they are facing, because once I have their attention?

Are you filled up with gratitude, bursting with wonder, and excited for the future?

No?

“Then, my sexy friend, welcome to the jungle – I have everything you need…”

The CFDG Plant Fueled Meal Plans are the answer!

These plans will cause difficulties to dissolve and help create the life you have always wanted.

I fully admit, without reservation, that I am over-the-top-wild about these plans and can be outrageously bold and overzealous at times. I try my best not to be pushy or obnoxious but to live by beautiful example.

In February of 2018, I had the unimaginable opportunity to write a Saturday Fuckery for Molly (and all of you!) on the absolute freedom I was experiencing after only 7 months on the meal plans. If you haven’t read it, you must check it out here!

I learned how to really eat in order to satisfy my hunger and nourish my bod!

The freedom of not having to constantly break food down into all its parts like LEGO toys (carbs, fat, sugars, calories, starch, etc…) was phenomenally liberating! In fact, I was so unfamiliar with eating simple, whole, unprocessed, plant foods that it felt strange for a long time just to eat and enjoy every mouthful without guilt.

I learned what real food is supposed to taste like!

When I wasn’t yo-yo dieting or starving myself to get skinny, I was a fast food addict, and I lived off a diet of processed food – chock-full of salt, sugar, fat, and chemicals. But once I made the switch to eating whole plant foods, my body went through a hard-as-nails 3-week detox, and then my taste buds literally changed and I suddenly tasted what happiness feels like!

I was faithfully batching the Meal Plans every week and approximately 3 months later, I noticed a huge improvement in my physical and mental health. This is where the Dirty magic comes in!

Irritable Bowel Syndrome (IBS)?
GONE!

Insomnia and fatigue?
GONE!

Symptoms of Hashimoto’s Thyroiditis?
GONE!

Migraine headaches?
FEWER than one a month which hadn’t happened since age 12!

Episodes of depression?
LESSENED so significantly that I was able to go off all medications but one!

I was feeling incredible! My skin was glowing, I was pooping like a champion, I had easily released 58 lbs, and I was on top of the world. It became my mission in life to scream (politely) my utter joy from the rooftops to all who asked.

And then, I got careless. I let a lot of vegan junk food, going out to eat, alcohol, and bad habits creep back into my life. Thankfully, though, Molly and Michelle got me back on track with Lighten Up. I was able to lose the weight that I had regained and totally transform my body and my mind. They have allowed me the freedom to fully create the person that I am meant to be.

Pan Roasted Corn Salsa

Makes 2 cups

Ingredients

  • 1/2 cup diced yellow onion 65g
  • 1/2 cup diced red bell pepper 75g
  • 1 tablespoon minced jalapeno stem, seeds and membrane discarded
  • 1 1/4 cups frozen corn 165g
  • 2 tablespoons chopped cilantro
  • 1/2 tablespoon lemon juice
  • 1/2 tablespoon lime juice
  • 1/2 teaspoon salt

Instructions

  • Heat a skillet over medium heat for 2 minutes (cast iron works best). Add the onion, red bell pepper and jalapeno and sauté for 5 minutes, adding a splash of water if they stick. Add the corn and saute for 3 – 4 more minutes, until the edges are browned.
  • Transfer to a small bowl and allow to cool for 5 minutes, then stir in the cilantro, lemon juice, lime juice and salt. Place in the fridge to chill before eating.

    Delicious! Served it on top of Lentil Sloppy Joe’s and a sweet potatoes. The flavors all complimented each other so well!
