1tablespoonminced jalapenostem, seeds and membrane discarded
1 ¼cupsfrozen corn165g
2tablespoonschopped cilantro
½tablespoonlemon juice
½tablespoonlime juice
½teaspoonsalt
Instructions
Heat a skillet over medium heat for 2 minutes (cast iron works best). Add the onion, red bell pepper and jalapeno and sauté for 5 minutes, adding a splash of water if they stick. Add the corn and saute for 3 - 4 more minutes, until the edges are browned.
Transfer to a small bowl and allow to cool for 5 minutes, then stir in the cilantro, lemon juice, lime juice and salt. Place in the fridge to chill before eating.
