Egg-free scrambles
Tofu scrambles are the pinnacle of a plant based breakfast! With a high-protein content and nine essential amino acids, tofu is the base of most egg-free scrambles for good reason. It has a firm yet custardy texture (we suggest using well-pressed extra firm tofu) and a mild flavor that you can season up however you want.
So what’s the secret to vegan eggy flavor? Black salt, also known as kala namak. Black salt has a slightly sulfuric smell and flavor that’s so egg-like it’s hard to believe. Contrary to its name, black salt is light dusty pink in color.
Once you have the tofu and black salt, create the scramble of your dreams with mix-ins such as sauteed veggies, roasted potatoes, cooked beans, and spices. We love using turmeric for its vibrant yellow hue and anti-inflammatory properties.
