“Finished my fourth batch ever yesterday! SimpleGetCozy Yes, I’m keeping count. I’m proud of myself and also this simple public statement continues to add to my accountability, momentum, and self-encouragement. Other than prepping all the spices first and labeling them well, everything else was done out of order by recipe in between family activities, so no idea how long it all took. But it does feel like it’s getting easier. I did the dressing first and WOW! That is going in regular rotation it is so delicious and one of my favorite WFPB dressings yet. Seriously, this may be sacrilege but it rivals T-crack! I ate some on my maple roasted brussel sprouts last night for dinner and today for breakfast. By the time Wednesday dinner rolls around, I may need to make another batch! Next came the cheese sauce and I was pleasantly surprised. Up to this point I have not really liked any of the WFPB cheeses I’ve tried that are made with potatoes and carrots (though admittedly none of them were CFDG recipes). This one is good! I added only a tiny bit of jalapeno and blended it in because the Littles and I don’t love that spiciness, and the hubby can always add more on top. The rest smells delicious and I’m looking forward to digging in tonight! Thank you Dirty Wizards!”
