Fancy Avo Toast with Walnut Parm

Move over, sad avocado toast you made in a hurry because you don’t have time for anything else! There’s a new dish in town. Our Fancy Avo Toast with Walnut Parm recipe is still quick, but we’ve turned the flavor way up. You’ll be finding excuses to make this for breakfast, a quick snack, a light lunch, brunch, or dinner in no time!

Walnut Parm

Raw walnuts: the first and most obvious ingredient. Raw means that your walnuts should be unroasted and unsalted.

Nutritional yeast: a plant based fave! This inactive yeast has a subtle cheesy taste similar to parmesan.

Avocado Toast

Bread: we prefer to use 100% whole grain, sprouted, or gluten-free bread, but you can use whatever tickles your fancy. Check the ingredients and be sure there’s no added oil or high fructose corn syrup.

Avocados: you’ll want soft, ripe avos for this. If you’re shopping a couple of days ahead of time, it’s ok to choose firmer fruits. Let them ripen on the counter, and then once they feel soft, pop them in the fridge. This will keep them from becoming too ripe as quickly.

Red radishes: we love these beauties for their sharp, zesty flavor. They give your toast a bite that complements the other flavors amazingly well.

Let’s make Fancy Avo Toast with Walnut Parm

First, we’re going to whip up some Walnut Parm.

Walnut Parm

Grab your food processor and the S-blade attachment. Make sure everything is completely dry before you continue. If not, you’ll end up with Walnut Paste, which is not what we’re going for.

Place the raw walnuts, nutritional yeast, garlic powder, and salt into the processor bowl.

If you have an older food processor, you can blitz the walnuts by themselves a bit before adding everything else. Process on high speed until everything is crumbly and uniform, and there are no chunks of walnuts floating around. Be careful not to over-process or you’ll get Walnut Butter, which we’re sure is delicious, but again, not what we’re going for. 

Remove from the processor and put into a container with an airtight lid. You can store your Walnut Parm in your fridge for a couple of weeks, but we promise it won’t last that long.

Fancy Avo Toast

Now that you’ve got your Walnut Parm done, you’re ready to make the best avocado toast you’ve ever had.

Thinly slice your radishes and green onion, and give your parsley a good mince while you toast your bread.

Open up your avocados by placing on a cutting board and slicing them lengthwise until you feel the knife hit the pit. Carefully rotate the avocado from bottom to top (end over end) while continuing to cut with the knife, keeping your fingers clear of the knife’s path. Once you’ve sliced all the way around, hold the avocado in both hands and twist the two halves in opposite directions to separate them down the center. Return the avocado half with the pit to the cutting board, and carefully hit the pit with the knife. Twist the knife to remove the pit. Push the pit off the knife by holding the back of the blade (the blunt part) and pushing the pit away from you with your fingers, keeping them clear of the edge. Now that’s how you avoid avocado hand! 🔪🥑

Use a spoon to remove the avocado flesh from the halves and mash it onto the toast. 

Load with your veggies and then sprinkle liberally with Walnut Parm.

Fancy Avo Toast with Walnut Parm

Makes 2 pieces of toast

Ingredients

Walnut Parm

  • 3⅓ tablespoons raw walnuts (25 g)
  • teaspoons nutritional yeast (4 g)
  • teaspoon garlic powder
  • teaspoon salt

Avo toast

  • 2 slices bread, toasted (100% whole grain, sprouted, or gluten-free)
  • ½ medium ripe avocado (150 g)
  • ¼ cup red radish, thinly sliced (30 g)
  • 2 tablespoons green onion, sliced (15 g)
  • 1 tablespoon parsley, minced (4 g)
  • 2 tablespoons Walnut Parm (store leftovers in the fridge)

Instructions

Make some Walnut Parm

  • Place all of the Walnut Parm ingredients into your food processor and pulse until everything is combined and there are no chunks of walnuts. Do not over-process or it will turn into nut butter. Walnut Parm is best stored in a sealed container in your fridge.

Assemble your Avo Toast

  • Smash some avocado on each piece of toast and top it with sliced radishes, green onions, parsley, and a hefty spoonful of Walnut Parm.
  • Enjoy for breakfast, brunch, lunch, dinner, or a midnight snack!
