This isn’t just about tacos
This might look like a regular ol’ taco picture with some star fruit on the side, but this picture is more than that. This picture represents a much bigger and more important story.
Last Sunday morning, I had an event to attend. I ate breakfast before leaving my house, and by the time the event ended at 12:30, I was hungry and ready for lunch. I was about 20 minutes from home, so I had a choice to make. I could either take a left out of the parking lot and go to a nearby restaurant, or I could take a right and eat at home.
Because I had batch-cooked the day before, I had a fridge full of healthy, delicious, plant-powered components ready to be thrown together to make yummy meals. So for me, it was a no-brainer. I took a right, went directly home, and made the best tacos out of the beans and red pepper sauce I batched the day before. Lunch was ready in five minutes.
If I hadn’t batched the day before, I would have turned left and gone to a restaurant. It would have been oily and expensive, and I would not have felt light and chipper like I did after this meal.
Here’s the thing: Most of us know that batch cooking is hella helpful (wow, I just went directly back to 1999), but talking about batching and actually batching is the difference between restaurant food and healthy plant-powered meals. You can’t enjoy the benefits of the thing unless you do the thing.
This is your nudge to get in your kitchen this weekend and batch some plants, even if it’s just a few things. I’ll take it a step further and give you step-by-step directions to get you going.

As I was eating these tacos last Sunday, I was thanking my Saturday self for putting in the time so my Sunday self was taken care of. At the end of the day, that’s what it’s all about. If you invest some time cooking healthy food today, you will be paid back later in so many ways. You will save money, you’ll be healthier and more vibrant, and you’ll truly enjoy your meals. It’s an investment you will continue to benefit from.
