Curry Roasted Cauliflower

  • 1 head of cauliflower
  • 2 tablespoons tahini 40g
  • 2 tablespoons water
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon salt
  • 1/2 cup red onion 50g, sliced
  • 1/2 cup cilantro 25g


  1. Preheat your oven to 400°F (205°C).
  2. Cut the cauliflower into bite-sized pieces and place into a large mixing bowl.
  3. Add the tahini and water to the cauliflower and mix well so that all the cauliflower is coated. Doing this with clean hands is most effective.
  4. Add the cumin seeds, turmeric, garam masala, salt, onion and cilantro and mix well.
  5. Spread the cauliflower in a single layer on a parchment covered baking sheet and bake for 20 minutes.
  6. Take out of the oven, flip with a spatula and bake for an additional 15 minutes.
