Place the water (or stock) and the quinoa in a small pot and bring to a boil.
As soon as it starts to boil, turn the heat down super low and cover the pan.
Let simmer for 20 minutes, until all the water is absorbed and the quinoa is fluffy and soft.
Altitude effects cooking time so check at 15 minutes to see where it’s at in the process. If the water is absorbed and the quinoa is soft, it’s good to go.
If after 15 minutes there's still liquid in the pan, cook for a couple more minutes.
