Creamy Avo Quinoa Salad

Ingredients

  • 2 cups cooked Quinoa 260g
  • 1 can black beans drained and rinsed well
  • 1 tomato seeds taken out and then diced (about 1 cup / 180g)
  • 1/4 cup red onion finely diced (35g)
  • 1/4 cup sunflower seeds 35g
  • 1 green onion thinly sliced (discard the root and use the entire green onion)
  • 2 tablespoons cilantro chopped

Dressing

  • 1/2 cup avocado about 1/2 of an average sized avo / 90g
  • 1 tablespoon lime juice
  • 2 teaspoons Coconut Aminos
  • 1/4 teaspoon cumin
  • 1/4 teaspoon dried red pepper flakes
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, add the quinoa, black beans, tomato, red onion, sunflower seeds, green onion and cilantro. Gently stir and set aside.
  2. In a small mixing bowl, add the avocado and mash well with a fork. Add the lime juice, Coconut Aminos, cumin, red pepper flakes and salt. Stir everything together.
  3. Add the avocado mixture to the quinoa mixture and gently stir until the dressing is thoroughly incorporate.
