  • 1 cup of dried fruit I used 1/2 cup of cherries / 80g and 1/2 cup of raisins / 70g
  • 1/2 cup dried dates 95g, pit taken out
  • 1 1/4 cups rolled oats 120g
  • 1 cup walnuts 100g
  • 1 cup dried coconut 40g
  • 1/4 cup ground flaxseeds 20g

  1. Place the dried fruit and the dates in your food processor and pulse a few times to chop everything up.
  2. Add the rest of the ingredients (oats, walnuts, dried coconut and ground flaxseeds) and process for a minute or so until everything is combined.
  3. Transfer the mixture into an 8 inch x 8 inch glass dish and press the mixture into the dish so it’s packed down and even.
  4. Cover the dish and refrigerate for at least 15 minutes.
  5. Store in the fridge and cut pieces as you want to eat them, or cut them into small squares and store them already cut.
