½cupraw cashews, soaked in water for 10 minutes(65 g)
1tablespoondried dates, pitted and soaked in hot water for 10 minutes(10 g / can be soaked with cashews)
⅔cupwater(155 ml)
2tablespoonslemon juice(30 ml)
1teaspoondried dill
1teaspoononion powder
½teaspoongarlic, cloves peeled and left whole(1 g)
½teaspoonsalt
Instructions
Drain the cashews and dates and discard the soaking water.
Place the cashews and dates into your blender, along with the rest of the ingredients, and blend until super creamy and smooth. If your dressing is too thick, thin with a bit of water to reach your desired thickness.
