Raw Vegan Cacao Truffles

(makes 13-15 / vegan / gluten free / soy free/ nut free)

Ingredients

  • 3/4 cup tahini
  • 2 tablespoons maple syrup
  • 6 dates pitted and soaked in hot water for 10 minutes
  • 1/3 cup raw cacao powder
  • 1/4 cup hemp seeds
  • 1/2 teaspoon allspice
  • 1/8 teaspoon sea salt

Instructions

  1. Place all ingredients in a food processor and process for 1-2 minutes, until everything is completely combined.
  2. Place mixture in a bowl and scoop out, 1 tablespoon at a time and roll into balls. Continue until all of the mixture has been rolled into balls (roll each ball between your palms for 10-15 seconds so that the balls are round and uniform).
  3. You can either leave them like this (they are super yummy plain) or you can coat them in sugar (as pictured). To do this, place some sugar on a plate and roll the truffles in sugar until they are coated evenly.
  4. Place truffles in the refrigerator and refrigerate for 2 hours.
  5. Keep truffles in the fridge or freezer.
