Feb 17, 2023
Mardi Gras is a plant based meal plan you can revel in. This celebratory plan is filled with New Orleans and Louisiana classics, and not a small amount of Cajun flair. As always, spice levels are up to you, so set your servings and laissez les bons temps rouler (let the good times roll).
Gourmet Vegan Meal Plan for Mardi Gras
Start your Carnival with Saucy Cajun Red Beans & Rice with Mardi Gras Side Salad. Wonderfully spiced saucy red beans are served over tender brown rice with a side salad topped by mouth-watering herby artichoke dressing.
A Louisiana classic gets a Dirty spin with our Crispy Eggplant Po’ Boy with NOLA-Style Remoulade. This crowd-pleasing po’ boy sandwich features crispy baked eggplant, veggies, and seasoned olive mix in a toasted hoagie roll with our well-loved NOLA-Style Remoulade sauce.

“I’m from the south, my mother lives in New Orleans, and I LOVE this!”
“Oh. Em. Gee. This stuff is gooood! I scarfed down this bad boy in no time. Thank you for a great recipe I will most definitely go back to. Hubby and I were gushing over this. I even chopped pickled jalapeno for the olive mix instead of pepperoncini. I don’t do spicy ANYTHING, but thought I’d give it a try. Yummo! And that Remoulade…mmmmm!”

Creole Gumbo is packed with Cajun red beans, okra, and corn in a richly-seasoned tomato base. You’ll be energized and ready to party with fancy avocado toast (capers and roasted red peppers, say what?) served on the side.
Beany Boudin Balls with Saucy Dirty Rice & Greens is a smoky, seasoned, and saucy combination of tender collard greens and brown rice with Southeastern Louisiana-style plant-powered meatballs drizzled in more delicious remoulade on the side.
“My 16-year-old daughter sends major kudos to Team Dirty for [this] recipe, she declared it “in her top ten ever” meals.”

Fuel your krewe with our Mighty Muffuletta Salad with Blackened Portobellos and Sunny Artichoke Dressing. Inspired by the famous New Orleans sandwich, this satisfying salad is loaded with crispy baked eggplant, blackened portobello strips, and seasoned olive mix, all drizzled with sunny artichoke dressing.
Our Mardi Gras Mousse will blow you away. This creamy, light, and citrusy treat is super easy to make with simple ingredients. The colors of the toppings are inspired by Mardi Gras, with purple (blueberries) symbolizing justice, gold (lemon) symbolizing power, and green (lime) symbolizing faith. It’s a perfect end to your Carnival, but it can be enjoyed any time of the year!
