Kale Yeah is a whole food plant based meal plan featuring recipes and meals starring—you guessed it—kale. 

What’s so fabulous about kale? Let’s talk about it.

First, kale is a leafy green vegetable that’s tasty both raw and cooked. Its sturdy structure makes it one of the leafy greens best suited to cooking since it retains its texture well. Kale comes in many varieties, including lacinato, red Russian, Chinese kale, and curly kale. These plans call for baby kale, but feel free to substitute with another variety.

Kale is also full of calcium and low in oxalates, which means that your body is better able to absorb and use the calcium. It’s a great source of fiber, antioxidants, vitamins C and K, and iron.
This menu has kale starring in skillets, salads, soups, wraps, and bowls. If you’ve had a fraught relationship with the leafy green, this plan is a great way to experience it in new ways and finally fall in love. We especially recommend the Curried Mushroom Skillet with Spicy Roasted Red Pepper Sauce and the Garlicky Beet & Kale Big Ass Salad.

These flavors played, dated, married, had kids, and hosted a family reunion all up in my mouth! 🤯 This plan was such an amazing surprise: I think I may have had my first mouthgasm🤤.
