Dirty Salad is a plant based meal plan that’s a veritable love letter to the flexible, delicious, and often overlooked salad. In fact, when we first released this plan, there was a good deal of pushback among members who were nervous the plan wouldn’t be satisfying or enjoyable. However, it became one of our most loved meal plans and a member favorite. This nutrient-dense plan is much more than “just salads.” Give it a try and see for yourself.

What’s on the gourmet menu this week
This plan kicks off with White Bean “Crab” Salad Stuffed Tomatoes and Quinoa Fruit Salad with Citrus Spice Tahini Sauce. Flower-sliced tomatoes are stuffed with creamy hearts of palm and white bean “crab” salad and drizzled with a luscious mustard sauce. Served with a fresh quinoa fruit salad, it’s a perfect meal.
Even after nine months on the meal plans, I am still blown away by the flavor surprises. Was just finishing up the #DirtySalad, putting the crab salad together. While it was in the food processor, I already thought we’d hate it and wondered what else I could do with this mixture. Once it was all put together, I cautiously tasted it, and OMG, it was delicious. The same thing with the dressing for the fruit salad–I couldn’t imagine it would be good, but it’s great. Three Bean Salad with Wilted Garlicky Bok Choy and Mineral-rich Green Apple Slices is a power-packed meal. It features a tangy three bean salad over green onion, dill quinoa, and seasoned lentils with more of our mouth-watering lemony roasted garlic Caesar dressing.
Close out this amazing week with Roasted Carrot and Potato Lentil Salad with Avocado Tartare Toast Points. Roasted rainbow carrots, seasoned lentils, baby potatoes, and sweeties sit atop a pillow of chopped lettuce and are drizzled with dressing. Served alongside toast points topped with an avocado, mustard, onion, cilantro, and olive mix for maximum yums.
