Last year, I went on a raw vegan cleanse for two weeks. I did it for several reasons but mainly I just like to torture myself.
During the two weeks of being a bunny, the only sweet treats I ate were dried dates and fruit.
The first couple of days sucked, sucked, sucked! I had sugar cravings and hot food cravings like a crazy woman who lives under a bridge with her rat children. I think I might have even cried (Okay, I totally cried).
During the two weeks, my cravings for hot food never went away (omg – the thought of a hot bowl of anything was enough to make my mouth literally water) but after the first few days, my sugar cravings completely vanished. GONE. Even the thought, sight or smell of freshly baked cookies did nothing for me. NOTHING.
I was amazed.
crack sugar was out of my system and there was not a craving left.
The first sweet thing I ate after my time of sainthood was two bites of vegan pumpkin cheesecake. Holy shit – it tasted so sweet that two bites was all I could do (and I was disappointed because unlike Mr. R Kelly, “my head was tellin’ me hell ya but my body was tellin’ me no”…… If you got that reference you can email me and we can be friends. If not, I will work on my reference skills).
Want to know the freaky part? I had the biggest, shittiest headache for the rest of the day after those two bites. I knew it was the sugar. That shit is evil.
With that, I have successfully written the crappiest introduction I possibly could have for this recipe.
Vegan Chocolate Chip Cookies With a Hint of Coconut
(because they may be evil but they taste flippin’ good and at some point we all will eat cookies and I want you to have a good recipe)
(Makes around 14)
1/4 cup coconut butter
3/4 cup Earth Balance Buttery Spread
3/4 cup sugar
1/4 cup almond milk
1 tablespoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chocolate chips
- Preheat oven to 350°
- Cream the coconut butter, Earth Balance, sugar, almond milk, and vanilla until it is creamy and smooth.
- In a separate bowl, add the flour, baking soda, baking powder and salt and whisk to combine.
- Add the butter / sugar mixture to the flour mixture and stir until ingredients are combined.
- Add the chocolate chips and stir again until they are thoroughly mixed in.
- Take 1 heaping tablespoon at a time and place on a baking sheet a couple of inches apart from one another.
- Press down slightly with a spoon.
- Place in the oven and bake for 10 minutes.
If you don’t have coconut butter you can use 1/4 cup more Earth Balance.
Because I fully realize that sugar is evil, I am currently working on a chocolate chip cookie recipe that has dates as the sweetener (you really should make this one first though because having a chunk of happiness in your mouth is fun)
